Perfect made in advance ready for a breakfast on the run
Ingredients
Filling ideas:
Left over chilli or meat dish from the previous evening meal
Chopped bacon or ham with cheese
Baked Beans
Tuna
Egg mayo
Pesto chicken
chicken and sweetcorn
Left over curry
Prawns or crab meat
Preparation
Roast potato in oven for average 1 hour 15 or sweet potato for 45 mins. I often do this when cooking something else or on low, late morning whilst working or before I leave to collect the children from school.
Prepare your topping.
Cut open and add butter to taste. Real butter is full of gut loving butyrate which has all sorts of beneficial properties, and is very good for children.
Add a touch of himalayan salt to taste.
Add your chosen topping.
I like to serve with crudites on the side.
